Help with the new Crisco formulation---0 Trans fat.?
I'm a pretty, good cookie baker. I'm noticing some texture differences in several cookie recipes this year when I use the newer Crisco formula. Any ideas about how to adjust recipes to accommodate this difference. I've had no problems with biscuits, or pie crusts....just cookies. The shortening sort of makes the dough softer and it's been a challenge not to over bake my cookies that use shortening.
Perhaps you could try chilling your cookies before baking or substitute butter for some of the shortening.
Shortening is soft over a wider range of temperatures than butter. Chilling shortening can firm it, which aids in rolling/forming cookie dough. Chilling formed cookies can help them keep their shape and raise more before spreading out and setting.
